Hafif kuruyan par&ccedil;alar ufalanarak toz haline getirilip torbalara konularak k\u0131\u015fa saklan\u0131r<o:p><\/o:p><\/span><span>Tarhanalar<span>&nbsp; <\/span>i&ccedil;ersine kat\u0131lan maddelere g&ouml;re &ccedil;e\u015fitlenir. Yo\u011furt tarhanas\u0131 Anadolu&rsquo;da en &ccedil;ok yap\u0131lan, <st1:metricconverter ProductID=\"1 kg\" w:st=\"on\">1 kg<\/st1:metricconverter> Yo\u011furdu b&uuml;y&uuml;k bir kaba koyup, i&ccedil;ine ald\u0131\u011f\u0131 kadar un koyunuz. Yeterince un ilave edip, ekmek hamurundan biraz daha kat\u0131 olacak \u015fekilde hamurunu yo\u011furunuz. &Uuml;zerini kapat\u0131p bir gece kendi haline b\u0131rak\u0131n\u0131z. Ertesi g&uuml;n hamuru k&uuml;&ccedil;&uuml;k par&ccedil;alara b&ouml;l&uuml;p temiz bir bez &uuml;zerine koyup kurutunuz. Hafif nemli haldeyken kalbur veya elekten ge&ccedil;iriniz. toz haline getiriniz. Tekrar serin bir yere koyup kurutunuz. Tamamen kuruyunca serin bir yere koyup k\u0131\u015fa saklay\u0131n\u0131z.<o:p><\/o:p><\/span><span>Domates tarhaas\u0131nda ise, <st1:metricconverter ProductID=\",5 kilogram\" w:st=\"on\">,5 kilogram<\/st1:metricconverter> ya\u011fl\u0131 yo\u011furt <st1:metricconverter ProductID=\",2 kilogram\" w:st=\"on\">,2 kilogram<\/st1:metricconverter> domates,<o:p><\/o:p><\/span><span>3-4 ac\u0131 biber ,3-4 adet so\u011fan ,Ald\u0131\u011f\u0131 kadar un ,Nane, maydanoz, tuz &nbsp;<o:p><\/o:p><\/span><span>So\u011fanlar\u0131 do\u011fray\u0131p, geni\u015f bir tencereye koyunuz. \u0130&ccedil;ine do\u011franm\u0131\u015f, biber, domates, nane, maydanoz ve 1-2 bardak su ilave edip iyice kaynat\u0131n\u0131z. Tencereyi ate\u015ften al\u0131p so\u011fuyunca i&ccedil;ine yo\u011furdu ve ald\u0131\u011f\u0131 kadar unu koyup hamur yap\u0131n\u0131z. A\u011fz\u0131n\u0131 kapat\u0131p 3-4 g&uuml;n mayalanmaya b\u0131rak\u0131n\u0131z. Bu s&uuml;re zarf\u0131nda zaman zaman hamuru yo\u011furunuz. Sonra hamuru k&uuml;&ccedil;&uuml;k par&ccedil;alara ay\u0131r\u0131p kurutunuz. Hafif nemli iken elek veya kalburdan ge&ccedil;iriniz. Tekrar bez &uuml;zerine koyup kurutunuz.
